A Note from your
CMSA President

Ho ,Ho ,ho; it is almost Christmas and the end of 2014. Wow where did the year go? As we close 2014 I want to thank all of our sponsors, vendors and members that make this chapter what it is.  Your support has been invaluable.  A special thank you to the board: Randy, Elizabeth, Julie, Phil, Fruz, and Tiffany.   I also want to remind you that there is NO December Lunch and Learn.

As we move into 2015, as I said in our November Lunch and Learn, there are changes for the sponsors coming.  As your board, we have recognized the financial strain of the economy and changes with healthcare coverage and guidelines have placed on your companies.  So starting January 2015 we would like to lower the yearly sponsor membership to $ 450.00/year.  We hope that this will accommodate more sponsors to join our chapter and experience the resources that are available to them.  I would also like to encourage everyone to join individually and to promote to your contacts this chapter.

Once again, thank you all and have a very wonderful and blessed Christmas and New year. We will see you again January 21,2015.

-Recipe of the Month-
MINI FRITTATAS
Picture
Heat oven to 375°
Spray oil in 6 muffin pan
Dice any vegetable you desire
One container of egg beaters ( I like the western)
Frozen home fries
Turkey sausage ( I cheat and use the kind already crumble and cooked...Jimmy Dean)
Cheese of your choice (Monterey Jack works good)
  • Sauté your vegetable to soft.
  •  Fry your home fries to done in low fat oil and drain.
  • Place in each muffin  area put all of your ingredients in with cheese last.
  • Bake for 30 minutes making sure inside of each muffin is done. 
  • Test with toothpick or knife if no egg come out on the stick or knife they are done.
  • Let cool before removing. 
  • Serve warm, cooled or freeze them for quick breakfast.
