CMSA Mid-TN President

Happy May to all. It is so nice to see sunshine and flowers again. I am looking forward to seeing you all at our next lunch and learn. Don’t forget we will not be having one in June because I will be at the National CMSA conference. I am pleased that so many have shown an interest in becoming or renewing their sponsorship. RECIPE OF
THE MONTH

Artichoke-Parmesan Cheese Grits
Ingredients:
2 cups quick grits
3 cups chicken broth
½ cup water
2 tablespoon chopped garlic
1 tsp cayenne pepper (or you can use tabasco or chulua sauce) -more if desired
6 tablespoons sour cream
3 tablespoons butter
1 to 1 ½ cups grated parmesan cheese
1 package frozen (Birds eye) artichoke quarters or 2-3 cans, drained
½ cup bacon pieces crumbled (add more if desired)
(you can also add sautéed mushrooms if desired)

Directions:
Spray casserole pan with Pam, set aside.
Boil chicken broth & water, add grits , cook about 5 min’s, remove from heat.
Fold remaining ingredients into grits, mixing well. If too stiff, you can add additional chicken broth.
Place grits in casserole, top with additional cheese and paprika for color if desired. Bake for about 30-35 mins till slightly browned and heated through.
